This is hard, but there's the standard Unix way of doing these things, detailed on
this page and on
this one. Be very careful, and remember that the partition will disappear from Finder on next reboot, but still show up in Disk Utility. To follow the instructions on that page, first open up Terminal and type "sudo su", and type your password. To edit the fstab file (read the page first), type "nano /etc/fstab". When you are done and want to save, type Ctrl-X, 'y', Ctrl-M.

here's software that claims it can hide partitions, as well as
this, but both are pretty pricy.
